Meet Elango, our Kitchen Porter from Chennai, located on the southeastern coast of India.  His eponymous dish is an authentic marinated and roasted chicken thigh, slow-cooked in a traditional Chennai kuzhambu sauce, a taste of true Indian heritage. Fairly Hot.
